Healthy eating series!

Hello my lovely people!

I have been so swamped with work recently so apologies for not posting very frequently, but it's third year and...it's cray!

Because I've been running between Uni and studying at home I haven't exactly been doing any crazy make-up looks so today I decided to start a new series about what I have been doing which is; healthy eating!! Anyone who knows me knows that my diet doesn't consist of any wheat, dairy or sugar as I have a billion intolerances and have blood sugar issues. As horrendous as most people thinks this sounds, it's actually turned into a GOOD thing! I have to eat a really healthy diet filled with veggies, fruit, whole grains and, best of all, FLAVOUR! I really do love my food and so when I cook, I amp up flavour and ensure I am truly enjoying every bite of what I eat :)

So, for this series I will be posting several options for meals and snacks starting with (obviously) Breakfast!! I'm not going to lie, I freaking LOVE breakfast!! I have to have a lot to eat at breakfast time because of my blood sugar issues - which is totally fine with me ;). This means I tend to have a two stage breakfast...oh yes...when it comes to Breakfast, I mean business! They're huge, flavour filled and packed with nutritious deliciousness!

So, without further ado, here are a few of my favourite brekkies :)

First up, my go to Breakfast: Avocado and smoked salmon scrambled eggs with rye bread toast and fresh fruit, muesli and yoghurt :)

 

This it TOTALLY delicious and filling and full to the brim with the fuel you need to get through you day :) 

To make the scrambled eggs I simply whisk up three eggs (organic and free range if you can...trust me), Himalayan sea salt, black pepper, garlic (minced) and a splash of almond milk. This makes the basic scramble, which I add to a hot pan with a bit of coconut oil in it. 
Then, once the eggs are starting to scramble nicely, I add an avocado, cut into cubes, and stir it all in. Whilst I'm doing this I have two slices of rye bread toasting so that everything is hot and ready at the same time ;) 

  



For this awesome (and yes MASSIVE, but don't judge, it took me about three hours to eat!) second half I cut up my favourite fruits; mangoes, grapefruit (add rice syrup to act as a sweetener for this), blueberries, raspberries, and then add toppings!! When I'm treating myself I like to add my absolute FAVOURITE raw muesli from the incredible Primrose's Kitchen and some Uh-maazing vanilla coconut yoghurt from CO YO!!! Then sprinkle some Chia seeds and top it all off with some passion fruit! This is one bowl of goodness that will help start even the worst days off with a smile! 


On the subject of treats, my second mention is a slight cheat, because it's something I ate at a truly wonderful cafe and didn't make (sorry, but you'll thank me for including it!)  

This beauty is sundried tomato and kale scrambled eggs on home made gluten free bread with smoked salmon...Yes...heaven is a place on earth!


 

I experienced this bliss at the charming Kitch in Canterbury. Really beautifully decorated and filled with home made and seasonal goodness! I love their ethos:

This was truly delicious, but the goodness doesn't stop there! Oh no; they also offer cooking lessons to help you learn how to include healthy meals into your daily life! Brilliant!!  



Last, but certainly not least, are a few little friends I would like to introduce to you... 

 

...oh yes...wheat free, dairy free and refined sugar free PANCAKES!!!! 

These beauties are perfect for a lazy weekend brunch or for a "breakfast dinner" 

Ingredients: 

1 cup Oats 
3/4 cup Almond milk (or equivalent) 
1 tsp baking soda 
Pinch of salt 
2 tbsp of coconut oil (or oil of choice/ butter) 
2 tbsp of rice syrup (or sugar substitute) 
Optional: Dark chocolate (I use 85% because it has less sugar and no dairy) 

Method: 
CHEAT! 
Yup. These are simple too! Heat up coconut oil in a pan and while it's warming (and you're keeping an eye on it of course!) blend all ingredients in a blender and then, once the pan has reached desired heat, simply pour in the mixture in little blobs of happiness! Wait until they can be moved with only very gentle pressure, flip and serve when they feel springy, not sticky! IT'S SO EASY!! 

Also, if you're doing the chocolate version, what I like to do is cut the chocolate into tiny shavings (or you can use dark chocolate chips which are sugar free and dairy free) and sprinkle them onto the pancake when they first go in. Be careful when you flip though as there might be some chocolate stuck to the pan that you need to scrape off to prevent burning! :)  

Once finished (these make anywhere from 5-7 pancakes depending on size and thickness) you can add a multitude of delicious combinations. Some of my favourites include; 

Blueberries and CO YO (it acts like cream!) 
Berries
Bananas and rice syrup 
MORE PANCAKES!! :p
